What is lutein?
Lutein belongs to the group of fat-soluble plant pigments, also known as carotenoids . Lutein is also approved in the EU as a food additive E161b and is therefore partly responsible for the coloring of processed cheese, jams and vegetarian spreads. Lutein can also be found in the macula of the human eye, where it always occurs - as in nature - in conjunction with zeaxanthin.
What is zeaxanthin?
Similar to the effect of lutein, zeaxanthin is also responsible for the yellow coloring of various foods, such as corn kernels and egg yolks, as well as the yellow feathers of canaries.[1] Zeaxanthin also belongs to the group of carotenoids. As zeaxanthin and lutein mainly occur in combination, the effect of zeaxanthin is comparable to that of lutein.
Which foods contain lutein and zeaxanthin?
There is a whole range of different foods in which lutein and zeaxanthin are found. As a rule, the concentration of lutein in food is much higher than that of zeaxanthin. The following figures all refer to the reference quantity of mg/100g of the respective food[2].

- Raw spinach: 10 mg lutein; 0.33 mg zeaxanthin

- Maize: 0.7 mg lutein; 0.53 mg zeaxanthin
- Raw carrot: 0.3 mg lutein; 0.02 mg zeaxanthin
